The following areas were observed to require more frequent cleaning:, - rafter in ceiling dusty (below the skylight), -where the cutting board/plastic is attached to the shelf (beside the handsink). There is a bit of debris accumulating here.
One of the foodhandlers was wearing several rings and bracelets. Jewelry is to be removed so hands can be properly washed and to prevent potential contamination of foods.
No cooling logs are being maintained when cooling items such as beans and soup.
Beans that had been cooked over 6 hours ago were found to be at 41C (internal temperature). Foods are to be cooled from 60-20C within 2 hours, then from 20-4C within 4 hours. Will need to change procedure e.g. divide beans into smaller portions to cool more quickly., Beans were discarded during inspection.
