Thermometer in milk cooler in dining room was inaccurate. Please provide an accurate thermometer in this cooler to verify the storage temperatures of hazardous foods.
Doors of the dining hall have a gap at the bottom large enough for a small rodent to enter. , , A small amount of old droppings were observed. Please ensure this corner of the floor is cleaned and sanitized. , , Operator has several traps set and no other evidence was observed, , Please adjust or repair the door so it is tight fitting to prevent pests from entering.

There were a few rodent droppings observed in the cupboard beneath the windows. Staff removed during inspection and began cleaning/sanitizing all affected equipment. No droppings observed in other areas of the kitchen. , , Windows are screened, traps are set and pest control measures are being done, monitored and recorded.
Several staff have taken food safety basics, but none have completed an approved course. A copy of the approved list of courses was emailed to the operator.

Ambient temperature of the Coke fridge was at 14.4 C. Advised staff to discard food in this fridge. Food stored in this fridge was in the processes of cooling and was placed warm into sealed bags and stacked on top of other warm food. , , When cooling food ensure it cools from 60 - 20 C within 2 hours. This can be done at room temperature to prevent the fridge and contents from warming up. Cool foods quickly by placing in small containers, in an ice bath and/or stirring frequently. Food must continue to cool in the fridge from 20 - 4 C within 4 hours. , , As the camp is closed for a week, fridge must be emptied prior to opening and temperature must be consistently maintaining 4 C or colder. , , Other units were at or below 3.3 C.
