Not in ComplianceHazardous foods were brought to the event without proper means of cold holding. Hamburgers and hot dogs were brought in open totes that were not insulated and with insufficient ice to maintain 4 C. Uncovered, uninsulated totes may allow temperatures to increase above 4 C. , , Additional ice was purchased and food moved to some coolers present. Remaining totes were stocked with additional ice and covered to help retain temperatures. Operator was advised to monitor temperatures closely and acquire additional ice as needed (store was in close proximity). , , No probe thermometer was present to verify the internal temperatures of hazardous foods being reheated. One was provided and proper temperatures were discussed with food handler. Foods probed on the grill were above 74 C.
Buns were left on bottom racks and racks set directly on the pavement. Bottled water was brought and set directly on the pavement. Buns from bottom rack were relocated. Operator had no means of elevating the amount of water brought to the event. , , Food and beverages are to be stored off the ground in a sanitary manner.
No garbage containers present for used food packaging or paper towels from hand washing. , , A garbage container was acquired during inspection.
Start time listed on food vendor notification was 10:00 am. Inspection began shortly after 10 and no food was present, some supplies had also not arrived. Food and supplies arrived closer to 11:00 am. , , For future events, ensure booth is fully set-up and supplied prior to the event start time stated in the notification.
