The queso only measured 22°C despite the hot holding unit being set at 66°C. The dip had only been in the warmer for one hour, so the cook reheated to >74°C and placed in an operational warming unit. Additionally, the hot holding temperature for queso was not being recorded. Manager will make all staff aware to check the queso dip too.
