There was no sanitizer available for surfaces. The operator was calling her partner to bring some from the restaurant
The operator had planned to cut and prep foods (mango) onsite but had no access to running water and areas was open to the environment. The operator will take mangos back to restaurant to prep.
Foods in the chaffing dish were below 60C. Addition fuel was added under the chaffing dish. Operator also advised to stir foods - areas on top cool faster than areas on the bottom.
Facility did not have their potable hand sink set up during the inspection. The operators partner was on his way with supplies.
