Quat sanitizer in red bucket was only at 100ppm; to be between 200-400ppm. Need to change more often. New sanitizer added so now at 200-400ppm.
Several of the foodhandlers had bracelets and/or rings. Jewelry to be removed, particularly when making sandwiches, etc., , After handwashing, taps were turned off with hands. To be turned off with paper towel to prevent re-contaminating hands.
Some processed meat/ham was being over-stacked in prep cooler insert in top of prep cooler; was at 11C. Do not stack high risk foods above the line in the inserts., ,
