Action required: service the walk-in cooler. Review required action with staff if cooler temperatures are measured to be high when completing temperature logs., , 2. Raw chicken was thawing in warm stagnant water. Reviewed acceptable thawing procedures with staff and management., , 3. Gravy was found to be 50C. Discussed reheating practices: reheat rapidly to 74C then place in hot holding. Only reheat food items once, if not used, discard.

1. Disposable container was being used as a scoop in the flour & left in the bulk flour after use. Action required: discard after use. Do not store scoops in contact with the bulk product., , 2. Ice cream scoop dipper well was measured to be 50C. Water is changed at minimum every 4 hours. To be re-monitored at the re-inspection. Please ensure it is maintaining temperatures at or above 60C.
