Frozen high risk foods were being thawed at room temperature. Frozen food were moved into the cooler and some under running cold water in the sink., , Ensure frozen food is thawed safely in a cooler over night or under cold running water in a clean sink.
A stand-alone station with ready to eat shelf stable food was observed. , This cart was not refrigerated but had high risk food (beans and potato cooked in the instant pot on site) being used as a filling for the snacks. Food was measured at 9C and operator indicated it was moved out of a back cooler within the hour, food was moved into a cooler during inspection., , Ensure high risk food are stored in a cooler and maintained below 4C or above 60C. , Also, low risk snacks with high risk food filling becomes a high risk food and has to be stored below 4C and 60C when it has the filling.
