-The noodle production area had some mouse droppings observed in corners and along walls. , Thoroughly clean and sanitize this area to prevent contamination of food and surfaces.
-There were icicles built up in a few of the walk in freezers. Check for leaks, ensure icicles are not building up on food boxes to prevent contamination, , -There was a large metal tooling machine in the back area close to the back butcher room and dry food storage shelves. There were metal shavings all over the machine. , The use of this machine can potentially contaminate food or food contact surfaces. Discontinue use of this machine or remove from facility. It was indicated that the machine would be sold.,
-The noodle production area had a significant build up of flour and food on all equipment and surfaces., This area required a deep clean to prevent attraction of pests. You must improve your frequency of cleaning this area. Clean immediately each time after using this area. , , -This area also had a lot of clutter. , Any items not being used must be removed to allow for easier cleaning and prevent attraction of pests., , -Open bags of flour observed., Keep flour in tight fitting containers to prevent access to pests and contamination.
