1) Spaghetti stored in the hot display line measured 23C (destroyed; hot well measured 34C). Store pasta at 60C or above., 2) Quick-cooling methods were not practiced - an insert container of spaghetti was stored on the prep counter; temp measured 31-34C. Recommend to portion hot while above 60C and then place into cooler for cooling.
A roll of paper towels was stored on the counter. Please store paper towels in suitable dispensers.
The 2 comp sink tap fixture was leaking and plastic wrap was used in a repair attempt. Please address the leak and properly repair.
