1. Inserts on ice not sunk far enough into ice to maintain product at or below 4C. Additional ice provided while on-site. , 2. Yam patties had just been brought from restaurant and measured at 24C. In order to avoid discarding, patties were quickly heated to 74C and placed in hot holding unit at 60C. Product MUST be transported either below 4C or above 60C., 3. Hot holding units only have 2 sternos. To adequately maintain consistent temperature, provide 3 sternos.
Hand sink not set up prior to serving food although supplies provided by organizer. Set up hand sink while on site.
