***The dishwasher sanitizer source bottle had the sanitizer level below the end of the hose. When the hose was above the level of the sanitizer the concentration was 0ppm. When the hose was in the solution the sanitizer concentration in the final rinse water was 100ppm. Operator had a full bottle of sanitizer present to change the source bottle.

***The dishwasher was not adequately sanitizing the dishes. There was no measurable chlorine in the final rinse water., Educated staff as to the manual sanitizing in the two compartment sink. Explained the correct sanitizer concentration and she set it up., Operator came in and the dishwasher was repaired during the inspection. She knew where the hole was in the source hose and that end piece was cut off. After the unit was primed, the rinse water had a chlorine concentration of 100ppm.
***Food was being stored on the floor of the walk in cooler and freezer.
***The canopy cleaning had been done Nov 2023 and was overdue at this time (Nov 2024).
***the dishwasher was not adequately sanitizing the dishes, sanitizer rinse was less than the 100ppm needed (about 10 ppm). It was determined at the time of inspection the source bottle did not contain the expected concentration of sanitizer. Discussed with staff manually sanitizing the dishes and utensils after they are done in the dishwasher. There were chlorine test strips present for checking the concentration.
***Pest control records were not available onsite for review.
***The expired FHP was posted. Discussed the Food Handling Permit was sent out by e-mail and if it cannot be located, the district inspector is to be contacted for a replacement.
***The canopy cleaning had been done Nov 2023 and was overdue at this time (Nov 2024).
