A bucket stored in the cabinet under the dishwashing sink in the basement had mold growth., * Discard the bucket and thoroughly clean and sanitize the surfaces of the sink cabinet.

After several consecutive tests, the max temperature measured at the dish level in the high temperature dishwasher was 69.1°C. The operator contacted a technician for repairs and was instructed to manually sanitize dishes in the meantime.
Meat in the walk-in freezer was stored in a bucket such that a lid could not be securely placed on top. The items were reportioned by the operator such that lids could be placed on top of all containers.
