The dishwasher had a 100ppm chlorine concentration. The unit as clean and the spray nozzles moved freely., , The chlorine sanitizer container on the glasswasher behind bar was empty and there wasn't any extra to swap out. A new container of concentrate has been put on order and in the meantime, the glasswasher has been turned off, and all glassware will be taken to the main dishwasher to be cleaned.
A few fruit flies were noted in the dish pit area. They seem to be coming from the floor drain so it is recommended to flush the drain with either hot water or a bleach solution to help remove any biofilm buildup that might be harbouring the flies.
Overall, floors, walls, counters and other surfaces were cleanable and in good condition., The hood over the grill and fryers was professionally cleaned in February 2026 and the filters are taken down weekly for cleaning., , 1- One floor tile is missing and the tile beside it is damaged beside the dish pit floor drain. This is a wet area and damaged or missing floor tiles can lead to water damage to the subflooring. Please replace the missing & damaged tiles., 2- The return air vents covers and the ceiling above the ventilation hood on the cookline are very dusty and dirty. Please give these a good cleaning to prevent dust from falling onto staff, food and equipment.

The dishwasher was observed leaking water onto the floor. A bucket was placed underneath the dishwasher to catch the water dripping, but the floor around the bucket was also noted to be wet., , Please ensure that all food equipment being used in this facility is in good repair.
1. Floor beneath the cooking area and dry storage were noted to be dirty with food debris and other items, including a plastic spice jar, were collecting on the floor., , 2. Walls and floor in the dish pit, specifically underneath the dishwasher, was dirty and collecting food debris and water. Fruit flies were noted to be attracted to the wet areas with food in the dish pit., , Please ensure that food and other objects are removed from the kitchen floors, and that all floors and walls in the facility are routinely cleaned and maintained.
