A bucket stored in the cabinet under the dishwashing sink in the basement had mold growth., * Discard the bucket and thoroughly clean and sanitize the surfaces of the sink cabinet.

The hot holding unit containing meat measured 40 degrees C. The lid was being held ajar with a cutting board. The operator moved the cutting board so the lid could be closed completely. The meat later measured 74 degrees C.
Several containers of food are uncovered in the walk-in cooler and freezer.
There are several sections of ceiling missing/damaged due to plumbing issues for which repairs are scheduled.

The hot water for the bar handwashing sink in the basement is turned off, the operator stated that it leaks when turned on. Repairs to the sink are in the process of being scheduled by the operator.

After several consecutive tests, the max temperature measured at the dish level in the high temperature dishwasher was 69.1°C. The operator contacted a technician for repairs and was instructed to manually sanitize dishes in the meantime.
Meat in the walk-in freezer was stored in a bucket such that a lid could not be securely placed on top. The items were reportioned by the operator such that lids could be placed on top of all containers.
