Food handlers were keeping the cooked chicken in metal inserts on ice at the prep table at the time of inspection. Operator was educated and instructed that this is not a good practice as ice will not maintain food temperature at 4 Deg C or colder. , , Operator moving forward will keep the cooked donair meat inside the prep cooler.
