At time of inspection:, , 1. All refrigeration temperatures noted were at or below 4 Degrees Centigrade - SATISFACTORY. The pizza and breakfast sandwich hot-holding units appeared to be at or greater than 60c/140F - SATISFACTORY., , 2. Hot dogs and taquitos (found on the main hot-holding roller) were not maintaining 60c/140F or greater:, - Hot Dog (1) internal temperature @ 51.7c - NOT SATISFACTORY, - Taquito (1) internal temperature @ 48.2c - NOT SATISFACTORY., , The owner / operator of this facility is requested to immediately conduct the following, namely:, , 1. Discard all hot-held food items on the main hot-holding roller. This was addressed during inspection., , 2. Ensure all staff are fully trained to re-heat / hot-hold high risk foods on this appliance., , Should hot-holding issues be a continuing issue at this facility, the owner / operator of this facility will not be permitted to re-heat / hot-hold any high-risk food products. If not already doing so, it is strongly suggested that the owner / operator record temperatures for all hot-held food items being offered to the general public.
