1) Two pails of Tom Yum soup were found cooling on the floor. Staff were asked to use shallow pans or half fill pails to cool the soup off faster and to put the pails in an ice bath to increase cooling speed. Ensure that proper cooling techniques are used for cooling Tom Yum soup. These techniques include cooling in shallow pans or half filled pails, using an ice bath or an ice wand to accelerate the cooling rate. Cooling requires a two step process where soup is cooled through the temperature danger soup as quickly as possible to 20 degrees Celsius. The second step is to cool to 4 degrees Celsius which can occur in the cooler.

Ensure you are cleaning in hard-to-reach areas such as corners., , June 23, 2023 The areas under the cooking area were cleaned but there were some hard to reach areas under the food prep area in the kitchen which required more detailed cleaning. Ensure hard to reach areas are cleaned and sanitized to prevent food contamination and the attraction of pests.

1) A large pot of Tom Yum soup was found with hot soup. When staff were asked the procedures for cooling the soup they demonstrated that soup was transferred in smaller pails and place directly into the cooler. A consultation was given of the correct methods to cool hot food items including Tom Yum soup by stirring while on ice until a temperature of 20 degrees Celsius is attained, filling the pail halfway to promote faster cooling. Ensure that hot items including Tom Yum soup are cooled quickly to a temperature of 20 degrees Celsius to prevent temperature abuse of the food that will promote microbe growth and toxin production that will cause foodbourne illness. , , Proper cooling techniques include using shallow pans, stirring with an ice wand or stirring while on ice.
1) The upright freezer located near that deep fry station had dirty shelves with food debris. , Ensure that the shelves in the upright freezer are cleaned and sanitized regularly to prevent the accumulation of food debris that can contaminate food.
