1) A squeeze bottle containing a ranch dressing was found on a food surface with a temperature of 14 degrees Celsius. The bottle's contents were discarded during the inspection. Ensure that foods that require refrigeration including ranch dressing are stored at 4 degrees Celsius or below to prevent the growth of microbes and toxin production that will cause foodbourne illness. , , 2) Squeeze containers of aioli mayonnaise and chipotle sauces were found at temperatures between 11-13 degrees Celsius. The sauces were discarded during the inspection and refilled halfway to aid in temperature control below 4 degrees Celsius. Ensure containers in the ice bath are fully submerged to allow for proper cooling of the sauces and monitor the temperatures of the sauces to ensure that they are at 4 degrees Celsius or below. Sauces kept at room temperature can only be kept for 2 hours and then discarded.
