Ensure non facility foods are stored separately from facility foods to prevent cross contamination., , *Cardboard was being used as a liner for containers of oil in the dry storage room. Staff stated they replace the cardboard every week. Discussed a more durable, non-porous, cleanable liner should be used like a tray. Change practice.
*Inadequate dust barriers/hoarding material noted. The dishwashing pass through window was not fully closed. There was no dust barriers/hoarding material present over window to prevent construction debris and dust from entering the dining space. Immediately close window and install dust barrier/hoarding material. Management spoke to contractor dust barrier/hoarding material was installed over the window. Clean and sanitize area around window. , , *Improper air handling unit operation. The air handling unit used to capture dust and debris generated by the construction work and continuous scrub the air was venting into the kitchen from the construction area. A hole was cut out of the dust barrier/hoarding material outside the walk-in freezer for the unit. Immediately change practice. The venting from the construction site cannot be straight into the kitchen. The unit must be placed completely inside the construction area. Unit must be continuously on when work is being carried out and filters regularly changed out. Management spoke to contractor and work was stopped. The air handling unit was moved into the construction area. Hole in the dust barrier/hoarding material was sealed up. Please clean and sanitize kitchen areas before food handling can occur. , , *Microwave, toaster, coffee, and tea supplies were stored directly on the counters outside the construction entrance/exit. Immediately move equipment and supplies to a clean area. Management moved equipment and supplies during inspection. , , *Dust and debris were noted around the entrance/exit door to the construction area. Strips of dust barriers/hoarding material was installed above the entrance/exit door. The way the dust barriers/hoarding material were installed it did not create a good seal and allowed dust and debris to be tracked into the dining area. Consider adding walk of mats, and/or change to a dust barrier/hoarding material with a zipper door and increase cleaning around the door and dining area. ,
