1) Chicken that was probed at a temperature of 42 degrees Celsius was found in a hot holding unit containing chicken, pork and bacon. The operator was told to reheat the chicken to a temperature of at least 74 degrees Celsius during the inspection and to increase the hot holding temperature in the unit. The reheated chicken had a temperature of 84 degrees Celsius and put back into the hot holding unit. Ensure that food that is hot held maintains a temperature of 60 degrees Celsius to prevent the growth of microbes and toxin production. Reheat foods to 74 degrees Celsius for at least 15 seconds and only one time.
1) A hot holding unit was found without a thermometer. Ensure that a thermometer is available to monitor temperatures.
1) A bottle of household bleach was in use for the sanitization step for the dishwasher. The concentration of bleach was between 10-50ppm. The operator was told to use only commercial bleach for dishwashers to ensure that the correct concentration of 100 ppm is reached to effectively sanitize dishware. The sanitizer was replaced that day.

REPEATED VIOLATION , , Clean inside the ice machine. , , June 20, 2023 The ice machine was found dirty with a build up of black slime and scale in the air vents inside the unit. The operator was told to stop using the unit and provide ice from an alternative source until the ice machine was properly cleaned and sanitized. Ensure that the ice machine is cleaned and sanitized at least once a month to prevent ice contamination.
