No sanitizer solution was readily available for surface sanitation. Ensure that an approved sanitizer solution is available at all times to allow for continuous and effective cleaning and sanitizing of food contact surfaces. The operator prepared a chlorine bleach sanitizer solution. Chlorine was then measured at >100 ppm., , Please follow the steps below:, , 1. Wash surfaces with a detergent and warm water., 2. Rinse detergent away with clean, warm water., 3. Wipe/spray surface sink for two minutes using an approved sanitizer., 4. After the sanitizing step, let the surface air dry.
- Chicken pieces wrapped in foil, along with other pieces of meat, were being held at around 40C near the cooking area. Keep high-risk foods at a temperature of less than 4C or greater than 60C at all times. Discard high-risk foods , held above 4C or more than 2 hours. The operator moved the food items to the cooler., , - Eggs were being held at temperatures ranging from 17C to 21C. The operator stated that pastry chefs had removed the eggs and intended to return shortly; however, they had not returned during the entire time of inspection. Keep eggs at 7C or below.
