Bomboloni's (filled donuts) were stored in a display cooler that is not maintaining temperatures below 4C. Internal temperatures of the donuts measured at 14C. Filled donuts to be discarded due to temperature abuse. Options were provided to the manager:, 1) repair cooler so that it is maintaining temperatures of 4C or less, 2) discard donuts stored above 4C after 2h, logs must be maintained that indicate when the donuts were removed from refrigeration and what time they are to be discarded at, and how many donuts are discarded, 3) can store donuts out for display purposes only, with donuts being sold to customers being stored under 4C in a working cooler

Small number of flies and fruit flies observed., Both front doors were open which provide an entry point for mice and insects into the facility. Doors were closed during the inspection.
