Rehydrated tapioca pearls are being held at room temperature. , , Once rehydrated the pearls become perishable and must be either held hot (60C or above) or held cold (4C or below). , , An alternative option is to use time as a public health control which would allow the rehydrated pearls to be held at room temperature for a maximum of 2 hours. Whatever remains after 2 hours must be discarded. As well a method of tracking this process must be implemented.

Quat based test strips had expired in Dec of 2024. , , Please replace with new non-expired test strips to be able to accurately test sanitizer solutions (200ppm).
