The QUAT-based sanitizer solution used to sanitize food-contact surfaces was measured at 0-ppm. The staff/manager was instructed to create a new sanitizer solution, which was measured at 200-ppm. The inspector informed the staff/manager that a 200-ppm QUAT sanitizer solution must be maintained at all times during the operations. Less than 200 ppm QUAT concentration means inadequate sanitization and more than 400 ppm means that QUAT residues could stay in food-contact surfaces, which contaminates food. Please ensure to test the QUAT concentration each time a solution is made, then daily before use, and recommended to check the solution every 2-4 hours throughout operations.
Open containers in the food prep cooler that contain food items were stacked together where the bottom of the top container was touching the food items inside the bottom container. The inspector informed the staff/operator that food must be protected from contamination during storage. Please do not stack open containers, as described.
An improper temperature control of food was noted during the inspection where high-risk food items were left in room temperature. Specifically, a bucket of gravy (measured at 41°C) and a full container of raw pork meat (measured at 20°C) was stored in room temperature. The inspector informed the operator that all high-risk food items must be stored away from the temperature danger zone, or that high-risk food items must be kept at or below 4°C or at or above 60°C. The indicated food items were discarded during the inspection.
The QUAT concentration in the multiple-compartment sink used to manually sanitize the dishes, equipment, and utensils, was measured at 0-ppm. The inspector informed the staff/manager that a QUAT concentration of at least 200-ppm must be maintained when manually sanitizing dishes, equipment, and utensils.
The paper towel dispenser at the front food prep station was not working. The inspector informed the staff/manager that paper towels must be placed in proper dispensers, so they remain protected from contamination during use. Please fix the paper towel dispenser.
The upright fridge's door (near the grill area) is damaged and closed using a hook. Repair the door., **NOT OBSERVED DURING THE INSPECTION (2024-10-24).

, Front row of the hot holding unit was measuring 50.3C Internal temperature of sesame chicken was 50.7C. Back row was above 60C. , - Ensure hot holding unit is holding and measuring >60C and monitored by staff to ensure temperatures do not go below 60C., - Staff turned up settings on the hot holding unit and brought new batch of implicated food items to replace. Temperature returned to >60C. Corrected during inspection.
