Out standing , Paper towel at the handwashing sink is not stored in a dispensing unit. Please store paper towel in a suitable dispensing unit (such as a paper towel dispenser or paper towel holder).
Dishwashing sinks don’t have drain plugs to hold sanitizer solution for sanitizing the utensils. Please have drain covers for the sinks.

Sanitizer bucket storing used cleaning cloths measured at 10 ppm chlorine. Manager stated they use part of the bleach water spray bottle solution (which measured at 100 ppm chlorine) and dilute it with more water when preparing the sanitizer bucket solution. No back up bleach was available in the food truck. Staff member went and purchased bleach during the inspection. Sanitizer bucket was re-made and tested at 100 ppm chlorine.
A spray bottle of yellow liquid labelled as "bleach sanitizer" measured at 0 ppm chlorine. Manager indicated that the spray bottle is old and that the solution is soapy water. The spray bottle was re-labeled.
1. Bleach was not available for manual dishwashing. Staff member went to purchase bleach at the time of inspection., 2. Improper manual dishwashing procedures are in place. The 2 compartment sink method for manual dishwasing was thoroughly discussed.
