Walk in cooler was at 12C. Owner indicated that the cooler was being opened and closed prior to inspection. Staff was bringing in foods to cool. Both juice and sliced tomato were probed and both were at 12C. Owner was instructed to pay close attention to the temperature as the temperature was in the danger zone. Should the temperature not return to 4C within a short period, the unit will need to be serviced. A re-inspection will be conducted and should the food remain in the danger zone, the food will need to be discarded. There needs to be a thermometer present to verify temperatures. , , The front prep cooler was at 6-7C and the cover was open. During lull periods, close the prep cooler to retain cool temperatures. , , A pot of cooked rice was sitting on the counter and was at 28C. It was discarded during inspection as it was in the danger zone. , , Hot holding of foods were at >60C. Good.
