A sanitizer solution must be available at all times. Ensure all equipment, utensils, and surfaces are washed with soap and water, rinsed, and then soaked or sprayed with an approved sanitizer solution. The operator was instructed to prepare a bleach sanitizer solution, as no other sanitizers were available onsite. The bleach solution was prepared, and chlorine was detected at 100 ppm. Paper towels were missing at the sink near the frying area. Soap was missing at the sink near the back kitchen entrance., , Ensure all hand sinks are supplied with soap and paper towels and remain accessible at all times to ensure proper handwashing. The operator indicated that supplies will be obtained soon. Please obtain soap and paper towels.

Orange 5 gallon Home Depot pail is used to store batter. These pails are not food grade and are not intended to be used for food storage. Do not use these pails for food storage- obtain food grade containers to replace them.

1. The two hand sinks at the back were covered with black garbage bags and not in use, as confirmed by the operator. Staff mostly hand wash at the front sink., , Ensure all hand sinks are accessible at all times to ensure proper handwashing. Education was provided. The garbage bags were removed. The sinks were supplied with hot and cold water but were not fully equipped with supplies. The operator indicated that supplies will be obtained soon.
Some utensils stored in a container on the shelf in the middle of the kitchen were noted to have food debris on them. Ensure that utensils are washed and sanitized thoroughly before placing them back into storage., , Some utensils were also stored with the business end face-up, rather than with the handle face-up. Utensils are to be stored with the handle face-up in order to prevent contact with the functional end and potential contamination.
There was no paper towel on the holder at the hand sink in the front area. A roll of plastic bags was hanging on the paper towel dispenser, and staff admitted they were using cloth towels to dry their hands. Do not use cloth towels to dry hands, as they harbour bacteria that will be transferred to hands upon use. Ensure paper towel is always available in the holder/dispenser.
Staff were not following the proper steps for washing, rinsing and sanitizing dishes and utensils (the rinse step in between washing and sanitizing was missed). The proper method was discussed with staff during the inspection. Ensure staff are following the method indicated on the poster provided at the three compartment sink.
