Black garbage bags were being used to cover dough. Ensure staff do not use garbage bags for food storage as they contain a chemical for odor suppression that can leach into food. Use only food-grade packaging for food storage.
Large gap noted between the back door and door frame (owner reported this was due to a vehicle running into the back door, damaging the door frame). Operator is currently working with contractor to have the gap repaired. , Ensure the repair is completed in a timely manner, so as to help prevent entry of pests.
Some of the large white laundry baskets used for storage of bread were noted to be old, worn and discolored. All food equipment must be smooth, impervious to moisture, easy to clean and in good repair. Ensure that you sort through all food baskets and discard all that do not meet this requirement.
