-The maintenance sticker on the fume hood above the stove indicated that it was serviced in March 2024 and was due again September 2024. There were no records for 2025. If the unit has been serviced in 2025 please provide verification.

-There was no sanitizer solution available in the kitchen at the time of inspection. The chef left the kitchen to prepare a QUAT solution but there were no spray bottles available. A 100ppm Chlorine solution was prepared at the time of inspection., , **The inspection was conducted between 10am-12pm. At that time lunch had already been prepared and baking was being done. The food safety plan indicates that 3 bottles of Chlorine Sanitizer should be prepared before any food preparation and all surfaces should be sanitized. If QUAT is going to be used instead of bleach please update the safety plan.
-There was a used cleaning cloth left out. Cloths should only be used once and then laundered. Strongly recommend labelled bins with a clean supply of cloths and dirty cloths. The dirty cloth was removed at the time of inspection.

- Operator was using Mr. Clean for sanitizing surfaces; this is not an approved food safe sanitizer. The opening procedures in the “Tamarack Kids & Company – Food & Sanitation Plan” indicate: Prepare separate sanitizing bottles for Pre-soap & Bleach. Please use a 100ppm Chlorine solution to sanitize food contact surfaces in the kitchen.
