Bleach/chlorine sanitizer was measured at 0ppm with bleach/chlorine test strips. Ensure bleach/chlorine sanitizer is maintained at 100ppm. The operator prepared a 100ppm bleach/chlorine sanitizer during the inspection.
When asked about manual dishwashing procedure, the operator informed that they soak the dirty dishes in bleach first, followed by a wash and rinse. Ensure proper two-compartment dishwashing procedure is followed where dishes are first washed with soap, followed by a rinse step and then placed into a sanitizer such as 100ppm bleach/chlorine for a minimum of two minutes.
A buildup of debris was observed in the cabinet beneath the two-compartment dishwashing sink. , Ensure the indicated area is cleaned and sanitized.
