A working and accurate thermometer was not available for the hot-holding unit. , While the operator ensured that cooked high-risk food (i.e., pizzas) were only displayed for 1.5 hours before either being sold or discarded, the pizza warmer device appeared to have cracks along the Plexi-glass, and was not able to maintain the required hot-holding temperature of 60 degrees Celsius (42 degrees Celsius maximum temperature, measured with probe thermometer).
Test strips for testing Quat-based sanitizer were not available on-site during the inspection. , , Please ensure that test-strips are available, and that employees are trained on how to use them to ensure that Quat-based sanitizer is used at the correct 200 ppm concentration. Please have test strips available for reinspection.
While no evidence of pests was observed on-site, including for flies, pest control records were not available for viewing by the PHI trainee to confirm this.
