Facility was not discarding high-risk pastries (ham and cheddar croissant & spinach and feta scone) held at room temperature after 2 hours. Staff reported the aforementioned products are prepared daily and held at room temperature until purchase or to the end of the day. A discard log was available for review. Hours of operation are 7 am-5 pm. PHI educated staff regarding time requirements at the time of inspection., , ACTION REQUIRED: Discontinuing holding high-risk foods at room temperature greater than 2 hours. Re-train staff on requirements. Time label or have audible timers to monitor the duration that high-risk foods are held at room temperature. , , Alternatively, the facility can apply for time as a public health control for specific menu items to extend the holding time.
