The operator is to ensure the containers of detergent and sanitizer (iodine sanitizer used at glass-washer) are monitored regularly and replaced when empty to ensure sufficient detergent and iodine sanitizer concentration is present during operating hours.
Yes (corrected during inspection) - the central food prep refrigeration unit in the main kitchen was requiring maintenance due to accumulation of frost/ice on the compressor motor unit affecting the general operation of the unit. The operator was to de-frost the unit forthwith and/or remove certain perishable food products from the refrigeration unit storage (and moved to another refrigeration unit or walk-in cooler until maintenance was completed)., , Note: the operator is to ensure regular de-frosting is scheduled, and if there is fast accumulation of frost/ice on the compressor motor unit, the operator is to contact a licensed technician due to the possibility of a small leak in the piping of the refrigerant that could be leading to the fast accumulation of frost/ice (which can damage the refrigeration unit as well).

The operator was advised of this required cleaning / sanitizing and asked to ensure staff monitor and clean the 'hard-to-reach' areas under equipment and shelving more regularly and thoroughly, as often as necessary (with cleaning schedule once per week or bi-monthly, as required).
