In ComplianceGrill and food stored on ice is too close to the front of the table and at risk of contamination from the public. Provide sneeze guards or move preparation further away from the public. Additional tables will be provided by organizer.
Artichoke/spinach dip measured at 40C in slow cooker. If serving hot, product must be quickly heated to 74C and then held at 60C for the duration of the event. Slow cooker is not designed to heat items quickly. Use induction heater on-site to raise temperature to 74C (goulash currently on heater is boiling) and ensure both products are then held at 60C or above.
Hand sink not set-up prior to starting event/handling food. Supplies provided by organizer. Ensure hand sink is set-up prior to operating.
