An insert of cooked taco beef that was intended to be put into the hot holding unit on the food truck at the southeast side of the tent had an internal temperature of 23 degrees Celsius., , Ensure that hot food that will be placed into hot holding is fully reheated to at least 74 degrees Celsius before placing into hot holding.
