PassOperator was handling raw meat and switched tasks without washing hands. Ensure to wash hands when switching tasks and after handling raw meat.
Thermometers were missing from hot holding cabinet and from prep cooler. Operator placed thermometer into units during inspection. Ensure that thermometers remain in units to monitor temperature.
Chicken wings were found thawing in the sink. The cold-water tap was turned on during the inspection. Ensure that all thawing is conducted properly, either under continuous cold running water, in the refrigerator, or as part of the cooking process.
