They were using a stand alone hot holding thermometer to check the dishwasher, a working thermometer in the refrigerator, and chlorine test strips for checking the sanitizer concentration but they were not documenting the information. Sample template was provided.
Operator was educated as to proper sanitizing procedures for food contact surfaces during the inspection and used the 100ppm chlorine solution to sanitize the cutting board.
