PassCleaning cloths were observed not to be fully immersed in the sanitizer solution. The operator was advised to ensure cloths are completely submerged and to maintain an adequate amount of sanitizer in the bucket.
The operator was unable to accurately describe the proper steps for cleaning and sanitizing the meat slicer when asked. PHI provided education on the proper cleaning and sanitization procedures in accordance with the Alberta Food Retail and Foodservices Code.
