Temperature was reaching 74.3C at the plate, confirmed by two T-sticks turning black., Left some T-sticks at facility for them to monitor. Manager indicated that dishwasher parts have been ordered., , 3 compartment sink available for back-up, if necessary., 200ppm QUATs solution measured.
Ice machine interior observed requiring deep cleaning at the time of inspection. Remove removable parts and wash/sanitize them. The rest of the machine can be cleaned in place according to manusfacuter instructions.
