During the inspection, staff were observed moving between non-food handling activities and food handling activities without washing their hands. , , Ensure all food handlers wash their hands at appropriate times, including before commencing food handling, after removing gloves, after conducting non-food related tasks, and whenever hands may have become contaminated. Staff should be monitored and trained to follow proper handwashing practices at all times.
A 2-compartment sink was being used for manual dishwashing. Staff advised that utensils and equipment are washed, rinsed, sanitized using a quaternary ammonium (QUATS) sanitizer solution, rinsed again, and then air dried. The post-sanitizing rinse may remove the sanitizer from food contact surfaces before the required contact time has been achieved., , Sanitizers must be used in accordance with manufacturer directions to effectively reduce microorganisms on equipment and utensils. Rinsing equipment and utensils after sanitizing may reduce the effectiveness of the sanitizing step and increase the risk of contamination., , Ensure all equipment and utensils are washed, rinsed, sanitized using an approved sanitizer at the required concentration and contact time, and then allowed to air dry.
