PHI suggested storing these in the cooler or on ice baths. It was observed that the raw eggs and meat were placed above the ready to eat food in the shelving of the cold holding unit. , - Staff complied to move these items below the shelving unit to prevent any drips falling into the ready to eat food for cross contamination.
The hot holding unit was measured at 51 degrees C at the time of inspection. , , - Staff complied to increase the temperature gauge of the hot holding unit. The temperature now measured at 62 degrees C. , - The cold and walk-in freezer were measured and maintaining at below 4 degrees C and below 18 degrees C, respectively. , , - Please procure a thermometer and placed inside the hot holding unit. ,
Boxes and half empty crates of food were observed on the floor of the walk-in freezer at the time of inspection. Some food drips were also observed on the floor of the walk-in freezer. , , Please ensure that food is kept at least 6 inches off the floor and ensure to clean any food drips/debris to prevent the contamination of food.
