Use wet towels are on the counter, the operator was advised it to put them in a sanitizer bucket, and it was done., , The sanitizer solution in the bucket used for wiping down the food prep counter measured 0 ppm of quaternary sanitizer. The operator replaced the empty sanitizer at its source, and the newly dispensed solution measured 200 ppm using quaternary test strips.
Scoops were found inside the containers of flour and sugar. The operator was advised to remove them and place them in designated scoop holders, which was promptly done to prevent cross contamination.
