Not in CompliancePotentially hazardous foods, including rice, a mixed hot dog dish, chicken sandwiches, and cooked meat sticks, were observed on-site without active hot holding equipment set up. Hot-holding units and burners had not been assembled despite food being present for service. A thermometer was also not available to verify food temperatures. The operator was instructed to retrieve and set up the required hot-holding equipment prior to service. Education was provided regarding the temperature danger zone, the importance of maintaining hot foods at appropriate hot-holding temperatures, and the need for a probe thermometer to routinely monitor food temperatures.
A temporary handwashing station was not available at the booth at the time of inspection. A handwashing station is required for food handling operations. This issue was corrected prior to the start of food service.
