Internal document states that fries can stay at room temperature for up to 2 hours only. Facility does not have any time tracking process in place. , , Ensure fries after pre-cooking is time tracked when stored at room temperature and unused fries must be discarded after 2 hours. A sheet was created to track time at the time of inspection.
