Sanitizer cloths were being stored directly on prep cooler cutting board area. Discussed keeping cloths fully immersed in sanitizer buckets. Ensure sanitizer solution level is filled high enough to fully immerse cloth in bucket. Bleach sanitizer measured >100 ppm. Discussed lowering level of chlorine to ~100 ppm. Operator added more water to sanitizer solution during inspection.
Weatherstripping was worn at back door. Operator is waiting for replacement piece. If not received, they will purchase locally.
There was dirt and dust on ceiling tiles in the kitchen. Please clean.
