A container of mashed potatoes in the warmer drawer measured an internal temperature of 23.8 degrees Celsius. The drawer was just turned on and was preheating at 33 degrees Celsius. This container of mashed potatoes was from the previous night's shift and had not been discarded. Discussed closing duties to include discarding unsold food to prevent mixing up old food with the new food batch.
