Inspector asked employee how utensils are reprocessed and no sanitize step was mentioned. Inspector educated the employee on 2-compartment sink dishwashing and sanitizing.
Hand sink was not stocked with paper towel.
Test strips are not available to check bleach water concentration for sanitizer and dishwashing. Please obtain chlorine test strips.
