A bi-metallic thermometer was not present within this facility to verify the temperatures of all cooked / re-heated / hot-held high risk foods., , The owner / operator of this facility is requested to conduct the following, namely:, , 1. Turn on both roasters after filling the bottom with water. Place both roasters on maximum temperature. Take a bi-metallic thermometer and insert into the water to verify a hot-holding temperature (or greater) is achieved. Please submit photographs of both roasters meeting or exceeding 60c/140F., , 2. Obtain a bi-metallic thermometer.
