No live insects or flies were observed on the open product. A sneezeguard was present, however, there were several ramekins to hold the used pits and used lemon wedges after customers have finished sampling. Operator was instructed to cease sampling from the open buffet table to prevent cross contamination. Post signage to inform customers - no sampling.

Ensure a sanitizer solution is available at all times to sanitize surfaces immediately after cleaning. Maintain chlorine concentration at 100 ppm. Keep contaminated cleaning cloths soaked in a sanitizer solution., , The operator prepared a chlorine bleach sanitizer solution in a bucket. Chlorine concentration was measured at 250 ppm. Cleaning cloths were washed and then soaked in the sanitizer solution.
The hand sink was obstructed by a large prep table. The hand sink is only accessible from the side. Please ensure hand sinks are easily accessible at all times.
